Lettuce wrap tacos, in 20 minutes


After suffering a disappointing brunch this afternoon and several disappointing take out orders in the days previous; I decided to go to the local grocery store to get snacks. Only PLOT TWIST, I elected to make lettuce cup tacos instead! Now I am going to share with you my latest recipe for a healthy meal in 20 minutes or less. 

What you will need is the following : 1 lb of Ground meat of your choice 
( I was going to go with chicken or turkey then n changed my mind last minute for 90/10 ground beef.)

1 packet of taco seasoning

3 to 4 roma tomatoes ( these are oblong shaped, best when slightly soft/firm) 

1 bush of cilantro

1 jalapeno 

2 limes 

Avocado ( optional) 

Olive oil

1 bushel of Romaine lettuce hearts

This is probably the easiest recipe I will publish on this blog FYI , despite that It is easily one of the quickest and healthiest. 

Ok ;

Step 1 Take a pot or frying pan and and place a drizzle of olive oil in the utensil, then turn the heat on the stove to 1 or 2 ( low ) 

Step 2 As this heats up, you should be washing the vegetables
( there are salad dryers / washers you can use that do an excellent job at this, how ever I just fill a large bowl full of cold water and submerge my produce, then I just swish it around  a bit run it under the faucet then shake it wildly,  I don't recommend this if you have a SO or family member with low tolerance for nonsense hahaha). 

Step 3 By now the pot / pan should have the oil hot enough, you will take the 1 lb of ground meat and use a fork to carefully disperse it evenly in the pan / pot, now cover and set a timer for 10 / 12 minutes, stir occasionally. 

 Step 4 you can now focus on cleaning and prepping the rest of the vegetables / produce. 
Dice the tomatoes, onions, jalapeƱo, and chop the cilantro. Afterwards  pull apart the romaine hearts so that each layer is its own separate peice ( should look like a boat) place the romaine leafs to the side and take diced produce place it in a bowl and halve and pour your lime juice over this mixture. 

step 5 in ten minutes your ground meet should be browned enough to add a tsp of the taco mix to the simmering meat. 

Finally continue to allow the meat to cook on the stove till it is safe to eat for GB, 15 minutes total, for poultry you want to allow it to sit for almost 20 minutes, but be sure to keep it covered before and after adding spices to ensure you do not dry it out. 

Now enjoy your meal, and feel free to add some sour cream or cheese even salt and crushed garlic to the mix of tomatoes, onions, jalapeƱos, and cilantro. Acid from the lime juice will create chemistry with the salt and the fat from the meat will come together to create a brilliant melody. ENJOY.

Also I shopped at ACME which is pretty expensive considering the quality, its just closer to my house, my point is I only spent 24 - 25 dollars on this meal that would make multiple meals from a single cook.
